Meatless Meals (I Wish) My Mother Made

If you are looking for a creamy pasta dish without the cream, look no further. Avocado Pesto Pasta, from Meatout Mondays, is a very rich, creamy pasta dish with all real ingredients and no dairy.

If you don’t like avocado, you won’t like this dish, but if you do, you’re in for a treat!

Very easy to make – I was able to make the pesto in my Magic Bullet while the spaghetti cooked (though I did need to do it in two parts, as I don’t have the newer Bullet with the larger attachment).  The Big Man really enjoyed it, and so did I. Sun-dried tomatoes were excellent on top.

 Between the avocado and the nuts, there is plenty of protein – unusual for a pasta dish. Enjoy!

Avocado Pesto Pasta

Ingredients:

1 lb. dried linguini
1 bunch basil leaves (about 2½ ounces)
½ cup pine nuts
2 ripe avocados, pitted and peeled
2 Tbs. fresh lemon juice (about ½ of a lemon)
3 cloves garlic
½ cup olive oil
salt (to taste)
freshly ground black pepper (to taste)
¼ cup chopped sun dried tomatoes (optional)

Directions:

  1. In a large pot, bring water to a boil; add pasta and cook to package directions.
  2. While pasta cooks, in a food processor, blend basil, pine nuts, avocados, lemon juice, garlic, and olive oil; season with salt and pepper.
  3. Drain pasta; in a large serving bowl, toss pesto with hot, freshly cooked pasta and garnish each serving with a basil leaf; for an extra touch of color and flavor, top pasta with sundried tomatoes.
