a quick, tasty snack

My favorite frozen snack lately has been banana with nuts.

It used to be that when I had some bananas that were more ripe than I cared to eat, I would make banana bread.  Banana bread is very tasty, but it’s not great for the waistline or the blood sugar, especially by the loaf.  It’s also time-consuming to make and requires use of the oven, which I avoid as much as possible for much of the year here.

So what I’ve taken to doing — and now I don’t always wait for them to be over-ripe — is breaking or cutting up a banana into bite-sized pieces into a freezer-safe container with a lid, and sticking it in the freezer.

When I want a little snack, I pull out one of these containers, microwave it for 10-15 seconds (or I could let it sit out for a few minutes, but I’m not always that patient), add some nuts (current choice is pecans) and eat with a spoon.

A friend of mine ate her bananas frozen, but she would mash them up when she took them out of the freezer, so it was more like ice cream.
